by Dale Williams » Mon Aug 03, 2026 9:18 am

Wednesday no wine with pasta with a creamy basil sauce

Thursday my city group met at Limusina. Champagne and Burgundy was the theme.

2006 Taittinger Comtes de Champagne
Great showing. Very light on its feet but with plenty of gravitas. Pear, lemon zest, bread and chalk. Lovely A-

2006 Cristal Champagne
Bigger, full and smoky, long finish. I think most people’s WOTNm, though I slightly preferred the Comtes. A-/B+

Lovely little pastries with crema and osetra
Guacamole
Queso

2020 Emmanuel Brochet Le Mont Benoit Champagne
Nutty almond notes, apple, a little bitter edge. B-

2002 Dom Ruinart “Blanc de Blancs” Champagne(black label)
Full, pear, hazelnut, rich. B+

Black Sea Bass Ceviche
Red Snapper Aguachile
Yellowtail Aguachile

2012 Philipponnat 1522 Rose Champagne
Crisp taut, raspberry and cherry, mineral finish. B+

2006 Vilmart Rubis Rose Champagne
Crisp, deft acids, bright red fruit, brioche. B+/A-

Squash Blossom Machete
Pork Belly Chicharron (great, though the mole wasn’t super winefriendly)
Steak Suadero Solteros

2010 Rollin Sous Fretille Pernand-Vergelesses 1er
Lemony citrus, floral, wet rocks. Very fine, A-/B+

2014 Drouhin Folatieres Puligny-Montrachet 1er
Corked. Damn.

2020 Girardin Calcaire Bourgogne
Nice rich flavors,,but I found this a bit too round for my tastes. B-

Lobster Al Pastor
Whole Red Snapper Tacos

1969 Patriarche Vosne-Romanee
Corked

1996 Chevillon Cailles Nuits St George 1er
Still a bit hard, red plum and raspberry, some underbrush and earth. B

2010 Chevillon Chaignots Nuits St George 1er
Spicy, fresh, and young, big future but drinking well already. A-/B+

2020 Chevillon Perrieres Nuits St George 1er
Big, black cherry and smoke, good but really closed in. Will be very good but for now B

Short rib birria
Filet with chimichurri negro

Fun night with great group

Grade disclaimer: I'm a very easy grader, basically A is an excellent wine, B a good wine, C drinkable. Anything below C means I wouldn't drink at a party where it was the only choice. Furthermore, I offer no promises of objectivity, accuracy, and certainly not of consistency.
