Traveling to Santorini Greece, any suggestions

Ever since I saw the pictures of how they manage their vines (like a loose rope in the form of a circle on the ground), I've wanted to go see a vineyard in greece. I have an opportunity to travel to Santorini in about a month and would love to stop into a couple of wineries. Suggestions are much appreciated! Also any restaurants I should look for in Oia. I was told to go to the 1800.
