WTN William Fevre Champs Royaux Chablis 2001

by John Treder » Fri Jun 29, 2007 10:07 pm

I bought this $15.99 bottle in January '03 because I stayed at Hostellerie des Clos in Chablis in 2002, which is next door to the Wm. Fevre winery. They both occupy buildings of a 15th century monastery. We had lunch in a cellar in the winery, one day.

Lots of lemon, a bit of oak, rather tart, a very enjoyable wine and a good buy. We had some of their wine with lunch, and I think my success in ignoring the bottle for a few years did it some good.

John - to me it seems that a "tart" Chablis screams for food. What did you have for lunch?
Chico - Hey! This Bottle is empty!
Groucho - That's because it's dry Champagne.

Charcuteries and, if I remember correctly, a cold quiche.

And last night, the meal was pan-grilled halibut and sauteed summer squash.

In both cases, Chablis fit very well.
