Heinz, that's beautiful. And I'm so jealous--have never seen white asparagus that fat before! In fact, we rarely see green that fat, but it's what I prefer.

What is grated "long pepper?"
A fresh pepper of some sort?

Looks delicious, by the way. Those fat fresh white asparagus would be difficult if not impossible to find, even in Los Angeles. We have white asparagus for sure, but they are not like that.

Those asparagus shown and used for the dish are of the class I. type. Asparagus of the Extra / solo type might be up to 1 " thick.
The European classification of White Asparagus is
Extra / Solo: straight, well-shaped rods, tightly closed heads. Minimum thickness: 1/2 "
I.: well-shaped, slightly curved rods and with tightly closed heads. Minimum thickness: 2/5 "
II: less well-shaped with slightly open heads. Traces of rust and light ligneous parts allowed. Minimum Thickness: 2/5 "
Minimum length of the rods 8 2/3 ".
All other Asparagus are classified as soup or salad type.

These bone-in New Yorks were grilled, then served with the Mushroom sauce. Very tasty.

Took a girls' golf trip to my house in Pinehurst last week, and this was dinner on the deck our last evening before heading back to the desert. The weather was balmy and perfect. (Disregard the ice in that glass of Chardonnay. My friend Joan likes her wine REALLY cold...and a little diluted.)

It really was perfect, Karen. Thanks. Now on the burgers, we cheated! We have a wonderful grocery store called Fresh Market (not to be confused with Fresh and Easy), and they make several versions of these gourmet patties. We all chose the one we wanted to cook. There was bleu cheese, bacon and cheddar, and smoked gouda and mushroom. I chose the latter.

Cecila, that Pavlova looks brilliant. My Mother-in-law would love to have one of those on Mother's Day. Is it the same day in Australia as it is in the US? In England, Mother's Day is in March.
