An important lesson about oven proof skillets

I do this at least twice a year - I go to deglaze the pan after moving from oven to stovetop and forget that it's metal handle is now approximately 400 degrees. But no matter - I grab that handle for all it's worth until the signal gets to my brain that this is a VERY bad idea.

I know there are the little "mitts" you can slip over the handle to avoid this - but I use this technique infrequently enough that I never remember to do that.

I took an All-Clad skillet out of the oven last night and left it on the stove top to cool off while I was rushing around sauteeing zucchini, and then I grabbed the handle and told myself I shouldn't have done that.
Actually I had been finishing a veal rib chop (about 2" thick!) in the oven. Must have been Official Veal Night.

I was rearranging a fire of lump charcoal about a week ago, and grabbed a piece laying on the side that looked stone cold. It wasn't! Still have very little feeling on my left thumb. The tongs were in my right hand!

If I had a nickle for every time I tried to 'handle' a pot/pan/dish from the oven with bare hands I could buy a good wine or two.

So a few years ago I went to the Welding Supply store and bought some bright red leather welders gloves that fit all sized hands. They work well and do not cost very much money as compared to those leather gloves you find in the fancy catalogs marked BBQ glloves.

Try it, you'll like it !!
