Need recipe for a Thai dipping sauce

I made Summer Rolls the other night when my friend came to visit (thanks Stuart for the suggestion). They were absolutely delicious...however, I wasn't keen on the dipping sauce I made to accompany them. I used hoisin, good quality soy, peanut butter, and scallions. It was salty and slightly bitter...I added some sugar and lime juice and that helped a bit, but it still wasn't great. Anyone have a good recipe for a Thai dipping sauce?

Thai Dipping Sauce
1/2 cup sugar
1/2 cup water
1/4 cup white vinegar
1 Tbs fish sauce
1 small chopped red chile

Combine, bring to boil, simmer uncovered for 5 min.
Remove from heat, cool slightly.

Stir in 1/4 small, peeled, seeded, finely chopped cucumber
1/4 small finely chopped carrot
1 Tbs chopped roasted peanuts

I don't really use a recipe, but kind of play it by ear (or tongue). Chunky peanut butter, soy sauce, lime juice, honey, sesame oil, and chili garlic paste. I don't like raw hoisin.

I'm sure this is not authentic but I use:

Tamari
Lime juice
Peanut butter
Dark soy sauce
Scallions
Dark sesame oil
Asian chili and garlic sauce
Conjunction Junction, what's your function?
Hooking up words and phrases and clauses.

I recommend Larry's recipe. It's one I've seen in many Thai restaurants and cookbooks.

I make a type of spring roll called Lumpia....and after trying many dipping sauces, I favor this: good quality lite soy sauce with Penzeys hot Chili pepper flakes. Not sweet, or too salty. Just right for me.
