It makes sense to keep them all around as long as it's feasible, Dave. I can't absolutely guarantee perpetuity - we could run into irreconcilable tech issues, for instance, if future OS changes utterly broke that old homebrew software we might be stuck. Etc. But I'm committed to keep as much of it around, as long as I can. As you note, there's some good stuff back there. :)

(I have that Wusthof Trident, by the way, and I even got it out last night, prompted by this discussion, to slice some broccoli very thin for a slaw. But bottom line, my good old trusty Chicago Cutlery chef's knife that I've been using since I started cooking seriously remains my prize ... it's like an extension of my right hand, and I see no need to abandon it.)
