RCP: Butterscotch Cream Chese Swirl Brownies

...or Peanut Butter Cream Cheese Swirl Brownies.

I made these yesterday opting for the butterscotch version. Mainly, 'cause I had butterscotch chips in the pantry and I can't imagine what else I was going to use them for.

8 ounces (1 package) cream cheese, softened
1/4 cup sugar
1 large egg
2 T flour

2 cups butterscotch chips (I used the entire bag)
2 cups firmly packed brown sugar
4 eggs
1 t vanilla
2 cups flour
2 t baking powder
1/2 t salt
1 cup chopped walnuts

Preheat over to 350F. Grease and flour a 12x18 jelly roll pan.

Beat cream cheese and sugar until smooth, Add egg and beat well. Add flour and beat until incorporated. Set aside.

Combine flour, baking powder and salt.

In a medium-size saucepan over low heat, melt the chips and butter. Remove from heat, stir in brown sugar. Allow to cool for 5 minutes. Beat the eggs in one at a time, add the vanilla. Add dry ingredients and walnuts. Pour into prepared pan.

Drop the cream cheese mixture by teaspoonfuls over the batter. Using a small knife, swirl the cream cheese into the batter.

Bake for 25-30 minutes or until cake tester comes out clean. Cool before cutting.

Traci, these look yum! But I can't figure out how a peanut butter version would work?

Just use peanut butter chips. Or, you could use peanut butter. I'd start with one cup?

Ah ok. We don't get peanut butter chips here. Or butterscotch chips, for that matter. But it will work with choc chips, right? I like the use of cream cheese - in anything.. ;)

I get your drift, but I gotta say: anyone who's been around Traci at mealtime even once is no longer "unsuspecting"!
