Serious question though... Are the flour and baking soda necessary to make the dish a success? I'm not at all familiar with Persian food. Thanks.

It ain't my recipe, but I would advise the flour and baking soda. I do the same thing for a frittata. It kind of binds the stuff together and makes it a bit lighter. Otherwise, you got an herbal omelette and a kuku is more of an eggy pancake.

Persian food is not all that complicated as long as you like saffron, rice, turmeric, and stewy stuff. Check out this website: Iranian Foods.
