Freshness, possibly? The key is to get them as freshly baked as possible, preferably in a paper bag being peddled either roadside or at your place of work. Of course, you may just not have as finely honed salt receptors as I do, Thomas. Salt, sour and umami all vie for my favorite, with bitter and sweet tying for runner-up.
