The Hot Brown
4 oz Butter
6 Tbs. all purpose Flour
1 Qt. Heavy Cream
3/4 cup grated Parmesan Cheese
Salt and Pepper to taste
12 slices of toast (sans crust)
1 lb. sliced roast Turkey
12 strips of cooked Bacon
12 Tomato wedges
Paprika & Chopped Parsley
Sauce:
Melt butter in a pan and add flour a little at a time to make a thick roux. Set aside. Heat heavy cream in a sauce pan until it comes to a slight boil. Add Parmesan and stir until melted. Add roux a little at a time so as to not overthicken. Add salt and pepper to taste.
Assemble:
Cut toast diagonally and arrange in an overproof dish or pan. Cover toast with turkey and tomato wedges. Pour sauce over turkey, tomato and toast. Sprinkle with additional Parmesan Cheese and paprika. Bake in a 350 1/2 degree oven until golden brown. Remove from oven and cross two pieces of bacon on top of each serving. Garnish with parsley. Serves 6.
