				Any recommendations for a decent quality (but not $400 a set) steak knife?
I'm looking for a set of 8 for under $100 if that's a realistic.

				You can get a set of Laguioles from Amazon.com in your price range (for six).  Costco has 'em, too, but this is a good price, and this link will give me a little bite.
