Please post some of your favorites and keep it going!! I'd like to add some new inspirations for this 4th -- it's going to be beautiful and hot, so I'm pulling out all the stops for a food-filled holiday!

Jo Ann, speaking of sides, I have to thank you gain for posting about the corn last year. Just a few weeks ago I made some again. Didn't look at a recipe this time, just made a great tasting sweet-sour simmering broth with a lot of spice in it, cooked the corn segments in it and let it cool. So fantastic!

Not sure what I'll be doing this year as the wife and daughter are heading out of town on Friday. In the past, though, I've made a Nicoise potato salad for the Fourth which I really love. I've posted it in the past but I'll put the recipe in this thread when I get a chance.

We're smoking a pair of ducks for July 4th eve, Chinese style so lots of star anise and five spice. It'll just be us, so the menu won't be extensive, but I might do a cabbage-peanut salad and a fried rice dish.

John's deli potato salad--John was a German fellow with a deli around the corner where I grew up in Brooklyn.

Skin and boil 5 pounds of potatoes. While they boil, slice two or three onions, thinly.

About a pint of real mayo, 1/2 cup white vinegar; sugar in volume enough to balance the vinegar after you blend the two--keep tasting it.

Lots of chopped parsely and cayenne powder.

When potatoes are boiled, cool them, then slice them thin. Mix onions and potatoes with half the mayo and half the vinegra/sugar blend. Keep adding and mixing mayo and vinegar/sugar in smaller doses until you have an almost liquid, but not quite liquid dressing with potatoes and onions in it. If you need more vinegar/sugar blend, make more.

Put into a platter, sprinkle chopped parsely over it and cayenne to taste.

Cool and serve. Tangy SOB!

A German friend here in the neighborhood makes a similar potato salad, but she apparently saves pickle juice and uses that in place of vinegar. Nice way to use up something that's otherwise a throw-away.
