Recipes I Want to See

Reading the NYT food section today and they applaud Eric Ripert of Le Bernadin for his pounded raw tuna with foie gras - a combination that would have never occured to me. It is in a separate section of the 100 best restaurants in New York City. Has anyone tried it?

I recently read an article about what foods folks over 60 should avoid. It spoke of how our bodies weaken as we age and cannot fight off all the things they did in our younger years. Raw fish was one of the foods to avoid, and the mention of Sushi types. No commercial pastries, or any boxed or prepared grocery store foods. The list was very long, and I stopped reading because it was ridiculous. One has to be smart and use common sense, IMHO.

I haven't, but I'm sure I would love that dish. This is where "trust the chef" comes in. If Eric makes it, it must be great.

Well, darn. I'm over 60 and have fairly recently eaten all those things. I guess I'm doomed. On a serious note, I do get the idea that the chance of getting a pathogenic bug from raw fish or shellfish becomes more acute as your immune system weakens, which it inevitably does as one ages. I know that I'll have to give up oysters on the half shell some day, but as Henry V reputedly said, "today is not that day."
