Had a very interesting dinner dish last night - Gang Bang Salmon. VERY good! I won't take up space here with recipes but if you are interested see

We had a Taittinger NV before it and an Argentine chard I dug out, Enemigo (which uses about the heaviest bottles I've come across).

The salmon has both sweet (Thai sweet chile) and hot components (sriracha) and it worked even better than I thought it would when I saw and liked it!

Mike, not Bill, but it would be great on chicken...I've used a similar recipe minus the mayo, and replaced it with a bit of Greek yogurt.

Agree. The mayo or yogurt are just flavour carriers for other components.

Bang Bang-anything is a current restaurant trend. I probably see shrimp more often than any other protein but that doesn't mean it wouldn't be great on other seafood, poultry and pork.
