So I'm making a large amount of a wine and beef broth reduction. I made one test batch, in which as soon as the two liquids were combined formed a layer of sticky, tarry goo that hardened into tiny pieces that looked like the ashes of a burned piece of paper that stuck to everything it touched: the bay leaves, the shallot halves, sides of the pan, stirring spoons and the strainer I tried to fish it out with.

I figured it must be some megapurple in the Cline Red Blend I was using for the wine. So I went to make another batch today. Same broth, different wine. Same thing happened. IT'S THE F-ING BROTH!

That is too freakin' weird, Jenise. I wonder what could be going on with that broth to produce such a result?

I'm thinking that the wine and broth should be reduced together, not separately reduced and then combined. That is, if that's the way you did it. If not, very weird.
