Gluten Free Matzoh

by Mike Filigenzi » Tue Apr 07, 2026 12:55 pm

Around this time of year, when the matzoh displays start showing up in the front of the grocery stores, my wife likes to make Matzoh Caramel Crunch, in which you put a layer of matzoh pieces on a sheet pan, cover them with a layer of caramel, and then a layer of chocolate. (I think we discussed this many years ago on this forum.) One of our best friends does not eat gluten and we have her over for dinner frequently, so my wife is always on the lookout for gluten free desserts. A couple of years ago, she decided to try gluten free matzoh in the caramel crunch. To our great surprise, we found that we like the gluten free matzoh a lot more than regular matzoh. It's made with tapioca flour, giving it a slightly sweet flavor that works well (although subtly) in the caramel crunch. It's also much tastier to eat out of hand. The brand we bought this year - Yehuda Matzos "Gluten Free Matzo-Style Squares" does mention that these are not a replacement for matzo at the Seder. Not a problem for us!

Ah - so you're ancestors did as mine did when they hit Ellis Island and dropped the "O" from O'Filigenzi!

Never had them, but Yehuda Matzohs non-GF are the best so I would guess they'd do well with this product. Are they also imported from Israel?

Oh, and btw, I'm sending your description of this to a celiac friend who loves making desserts.

Thanks!

I love gluten in basically all its forms, but the Trader Joe's gluten-free rice crackers (not rice cakes) are very, very tasty. Or I guess it's the texture I really like, but I can see how that would go with matzo. It's a real shame out here the true delis are few and far between, so you can't even get matzo ball soup around Passover / Pesach. I'd be curious to see how that would be with gluten-free matzo.

Aren't rice crackers intrinsically gluten-free?

I've even seen corn tortillas marked as gluten free. Well, duh.

They are imported from Israel; I'm not sure whether there are domestic GF matzohs out there. And I'm sure your friend will love the caramel crunch stuff. As long as she's good with making caramel, then it's fast and easy to make. It's also very tasty and very addictive!

We buy rice crackers to have them around to serve the same friend we get the GF matzoh for. I like the ones we've had (although I don't think we've tried TJ's yet). It would be interesting to try the tapioca flour matzoh in soup. I don't know whether the different flour would have an effect on the structural integrity of the balls or not(?)
