I think it's basically a term for tomato sauce. Not positive, but I think that's more or less correct.

it should be the basic tomato sauce (sugo = sauce).

Sugo is an Italian word for "sauce." Tomato is an English word for "tomato." Ergo...

Is it an Australian phrase?

I'm interested in this recipe.

Tomato Sugo is usually the term referring to traditional Sunday Sauce (or "gravy" as my family would put it).

In some regions it is a meat based sauce, starting with neckbones and/or sausage browned in olive oil with lots of garlic and building from that. The version with no meat is usually tomatoes, olive oil, garlic, lots of basil, fresh grated cheese.

Either way it is a fabulous and easy sauce, a staple in any good Italian household!

Piling on, Bob, "sugo" literally translates as "sauce" in English. Check the index pages in any of Marcella's cookbooks (for example) and you'll find loads of recipes for all manner of sugi, from tomato to clam to just about anything edible.

Bob, when you make that recipe, I sure wish I were close enough for an invite. Say! I have an idea...you come to Mo'Cool this August, you make this in your room at the hotel, and I bring the wine! I promise it will be good stuff too. :D
